So, I bought some cranberries to float in mason jars with floating candles (like so) for decoration at the progressive dinner. But then I realized that I only have normal candles, not floating ones. So I scratched that idea and instead decided that I would seek out some recipes that include cranberries. I found a recipe for cranberry muffins and having some white chocolate chips left over from another little project I was doing that day, figured that the recipe was indeed in need of some white chocolate chips.
Ingredients:
1 ½ cups flour
½ cup sugar
1 tablespoon baking powder
¼ teaspoon salt
1 cup cranberries
1 ½ cups flour

1/2 cup white chocolate chips
1 cup milk
1 egg
Directions:
1. Preheat your oven to 375°F. Lightly grease or spray a 12-cup muffin tray.
2. Combine flour, sugar, baking powder, and salt in a large bowl; mix well.
3. Whisk together milk and egg in a small bowl; add to flour mixture and stir until just mixed. Fold in cranberries and chocolate chips. Fill each muffin cup ¾-full. Bake 25 minutes, until a toothpick inserted in the middle of a muffin comes out clean.
