The wonderful thing (but not the only wonderful thing) about being home is that I get to read my mom's Real Simple magazines. I found this delicious looking recipe in February's issue which I hope to try soon, but I'm certain it will be yummy, so I'll share it with you guys:
Maple-Roasted Chicken with Sweet Potatoes
Ingredients:
2 small sweet potatoes, peeled and cut into 1-inch chunks
1 Onion, cut into 1-inch wedges
6 sprigs fresh thyme
2 tablespoons olive oil
Kosher salt and black pepper
1 3 1/2 - 4 lb Chicken, cut into 8 pieces
3 tablespoons maple syrup
Directions:
1. Heat oven to 400 F. In a 9 x 13 inch baking dish, toss the sweet potatoes, onion, thyme, oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper
2. Pat the chicken dry with paper towels. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Nestle the chicken among the vegetables and drizzle with the maple syrup.
3. Roast, stirring the vegetables once, until the chicken is cooked through, 55 - 65 minutes.
I also found this really neat DIY table painting idea on Design*Sponge. It would be perfect for an old ugly table to bring it back to life, or a thrift store table which needs a little TLC to make it right for your space.
